Right now the only vegetable my son eats is potato. I know it is very disappointing but I know this will pass and just like his Dad, when he grows up, he will learn to eat veggies slowly but surely especially he has me as his mother who loves vegetables. I have a Potato Salad recipe that I grabbed online that are also a hit for the kids.

Prep Time: 15 minutes
Cook Time: 13 minutes
Total Time: 28 minutes
Yield: 8 servings, potato salad

Ingredients:

* Potato Salad Ingredients
* 2 lbs. Yukon gold potatoes
* 4 slices bacon
* 1/2 cup diced celery
* 1/4 cup finely-chopped red onion
* 3 hard boiled eggs, chopped
* Potato Salad Dressing
* 1/2 cup mayonnaise
* 2 Tbsp. Dijon mustard
* 1 Tbsp. honey
* 1 Tbsp. apple cider vinegar
* kosher salt and freshly-ground black pepper, to taste

Preparation:

1. Peel potatoes and cut into 1-inch chunks. Place in a large saucepan and cover with water. Bring to a boil. Let potatoes cook until tender when pierced with a fork, 10-13 minutes.

2. While potatoes are cooking, fry bacon until crisp. Drain on paper towels.

3. Drain potatoes and transfer to a large bowl. Add celery, onions and chopped eggs to potato salad.

4. In a small bowl, whisk mayonnaise, mustard, honey, apple cider vinegar, salt and pepper together. Add to potato salad, tossing to coat well.

5. Crumble bacon over potato salad. Taste potato salad, and adjust seasonings.

Motherhood is a very precious task. It is a blessing if you have given a task to be a mother. If there is one thing that can define motherhood, maybe it’s the IWC Watches from Lussori. They offer the rarest and most unique hard to find timepieces. Just like all the moms out there that are rare and timeless. I have never seen such wonderful and luxurious watches in my life and you know how I love watches. It gave me a natural high to see pieces like Chopard and Omega at their store. Goodness! I’ve been wanting these for as long as I can remember…

Chopard Happy Sport

Omega Speedmaster

Of course motherhood is incomparable but I bet any mommy will be smiling from ear to ear if she receives one of these. I know I will.

sometimes you will know real friends through the years, it just gets disappointing when you thought you built real friendship when the truth is you didn’t.

Just recently, two of my friends fought over something, though I think it is very petty, it is just saddening that they had to throw harsh words in public. Knowing them for quite a long time, I would never thought of any of us fighting over such small things. I hope they make up soon.

I had my own misfortunes with friendships. I don’t want to go on details of my experiences but just in random… I just feel disappointed that things got different over something really simple. From my point of view, I think I have the right to be a little pissed (and for the record, I wasn’t pissed at all) but then again it’s such a simple thing and it will be too immature to make it a big deal and I never hold grudges especially to people who are close to me, I’m just not the type but I noticed that things changed. I talked to my husband about it and he said, things are just the way it should be, you may have valued that friendship but to them, they didn’t so I just have to let it be. Friends told me that “at least I knew” and “that I can do without them”, I know I should see the brighter side of things, it’s just that I regret that it has to be this way.

On this day God wants me to know…

… that love is the opposite of logic. Logic is argumentative, aggressive upon the mind, splits the world into right and wrong, us and them. Love is generative, compassionate, embracing all creation. Logic pays attention to what is being said. Love pays attention to how things are said. Logic leads to debate. Love leads to communion. Practice love to be closer to God.

Aside from my love to God, when I read about this message I thought of marriage. That love should win over logic when you are married. My mom would always tell me that you should be submissive to your husband, (almost) all the time. I learned to choose my battles, there are times when I know I can win an argument but will I ever truly win? What will it do to me? So over the years, I have this thought, if it won’t hurt me or my husband or our son, the husband can always win an argument no matter how logical I think!

My dad is a retired general. So you can say, our men in uniform are truly close to my heart. I know their hardships and battles even away from the battle zones. Being away from their families for their call of duty is very hard, I should know because there was a time in my life when my dad was not able to attend something really important in school. I heard so many stories from him about soldiers. For the heroes and heroines of our time, there should be something concrete for their future after their retirement. I heard about online military degrees at MilitaryDegree.com for the US Military and I think it is a brilliant idea that a company is dedicated to give education to their military men. Something that our government should look into for our own men in uniform!

… that God can fix anything. Have you ever witnessed a skilled craftsman going into an old broken down home and restoring it into something fabulous? God is the master of restoration, taking the broken and damaged and making them beautiful. Are there some things in your life that could use a little work?Allow yourself to be God’s next fixer upper project.

Thank you Lord for making my sister well again. Let her recover fast and make her strong before she leaves for Canada. Please make my son well, take his colds and cough away. Amen.

My friend in the United States told me yesterday that they bought a second hand motorhome this year, though it needed some motorhome repairs, the huge vehicle is now working like brandnew. We are dreaming of having a vacation together, I was very close to her when we were in College. She is encouraging me to plan a US vacation next year and visit her during the Summer so I can experience living in a motorhome. I am not sure if I really want to experience that actually, but of course parks in their country are much better than ours so maybe I can take that into consideration. My husband and I are planning a vacation next year, we are not yet sure if we can pursue the US trip but my husband’s brother who is living in Georgia wants us to go around September. We might think about it, use our notebook and calculator to compute if we really can afford it. We sure hope so.
